Yummmm.… Tummy-friendly food of the month (or great Swedish cooking for tummies)
Squash and tomato casserole with smoked pork chops and rice
4 portions
1 tbs butter
1 can crushed tomatoes
8 fresh tomatoes
1 large squash
2 tbs fresh thyme or 2 tsp dried
2 tbs fresh basil or 2 tsp dried
2 tbs olive oil
Season with salt and freshly ground pepper, onion powder and 2 garlic cloves (optional)
600 g smoked pork chops or other smoked meat
Rice for 4 portions
Prepare as follows:
- Preheat the oven to 200 degrees.
- Mix the crushed tomatoes with a little salt and onion powder. Pour the mixture into an ovenproof dish.
- Place the fresh tomatoes in boiling water for about 1/2 minute. Then peel off the skin and slice them.
- Rinse and slice the squash.
- Arrange the tomato and squash slices in layers on top of the crushed tomatoes.
- Place the dish in the oven for about 30 minutes.
- Chop the fresh herbs and mix with olive oil, salt and freshly ground pepper and the pressed garlic cloves (if desired). Pour the oil mixture over the tomato and squash slices and return to the oven for 30 more minutes.
- Cook the rice according to the package instructions.
- Gently brown the pork chops in a frying pan in a little butter and serve with the vegetables and rice.
